Healthy Carrot Bread


This is a delicious bread which can be had by itself with a cup of tea or topped with some peanut butter or preserves, for the kids. Add a dollop of Greek yogurt or mascarpone drizzled with honey for a bit of indulgence. It is made with the goodness of whole wheat flour, honey, olive oil, carrots, eggs and nuts. A great snacking option and a lunchbox treat for the kids. Feel free to add oats, sunflower seeds, raisins, dry cranberries etc.

What you need:

1.5 cups carrots, grated

½ cup olive oil

½ cup honey

2 eggs, beaten

1 tsp vanilla extract

1.5 cups whole wheat flour

½ tsp baking soda

½ tsp baking powder

½ tsp salt

1 tsp cinnamon

½ cup walnuts, chopped

½ cup raisins (optional)


Putting it all together:

1. Preheat the oven to 180 C. Grease your loaf tin with some olive oil

2. Beat together the oil and honey. Add the beaten eggs, vanilla and carrots

3. Mix the dry ingredients (except the nuts) together and add to the carrot mixture.

4. Add nuts and raisins (if using)

5. Spoon batter into a greased pan and bake for approx. 45 mins in the lower rack of your oven. Your bread is done when well browned on top. Insert a knife to check that it is cooked right through.
