Banana and Walnut Bread


This recipe is true to its name. Super easy and super quick. Everything is just mixed together in one bowl. It’s a great way to utilize overripe bananas which are usually lying around in the fruit bowl. You can make this bread more interesting by adding half a cup of blueberries or strawberries.

What you need:

200g plain flour

200g caster sugar

50g butter, softened (important that it is soft)

1 teaspoon vanilla extract

1 teaspoon bicarbonate of soda

1/2 teaspoon baking powder

1 egg

3 very ripe bananas

½ cup chopped walnuts

Putting it all together:

1. Preheat oven to 180 C / Gas 4. Grease and flour a loaf tin.

2. Mash bananas and add flour, sugar, butter, vanilla, baking powder, bicarbonate of soda and egg. Mix well. Pour into loaf tin. The batter will be doughy and thick and not smooth like a cake batter.

3. Bake at 180 C / Gas 4 for 50 to 60 minutes or until skewer inserted into center of cake comes out clean.
