Creamy Spinach Pasta for Kids





















My kids totally love this "green" pasta. The spinach is cooked and then blended to make a smooth and creamy sauce. This is a great technique for getting fussy eaters to eat their veggies!

The trick to getting a bright green sauce is to make sure that you don't overcook your spinach. Take it off the pan while it's still bright green.

What you need:

1 bunch spinach, roughly chopped

1 tbsp olive oil

½ an onion, finely chopped

2 garlic cloves, minced

½ tsp salt

2-4 tbsp milk or cream

2 tbsp or more parmesan cheese

Pasta of your kids choice


Putting it together:

Heat the oil in a pan. Add the onions and minced garlic. Sautee till the onions turn translucent.

Add the spinach along with the salt. Keep tossing the spinach while it cooks. Don't overcook!

Blend the spinach and onion mix till you get a smooth consistency.

Bring a pot of water to a boil and add salt. Cook the pasta till al dente (firm with a bite). Drain the pasta, saving some of the pasta water.

Add the spinach sauce back in the pan with 1/4 cup of the pasta. water.

Add the cream or milk and stir till incorporated.

Turn the heat off and add your cooked pasta.

Add parmesan cheese and toss till the sauce fully coats the pasta.

Top with additional cheese and serve.
