Asian Raw Mango & Quinoa Salad


Sunny days are made of wholesome refreshing salads.

This Asian salad is a variety of colorful fresh veggies, all topped off with a homemade dressing and enriched with the goodness of sesame seeds.

You can use quinoa or vermicelli as per your liking.

You can use the leftover veggies in these Vietnamese Summer Rolls.

What you need:

1/2 cup raw mangoes, thinly sliced

1 carrot, thinly sliced

1 cucumber, thinly sliced

1/2 cup purple cabbage

1 cup quinoa, cooked

1 bunch rice noodles, boiled

Handful of mint leaves

Handful of coriander leaves

Handful of peanuts

Toasted sesame seeds (optional)

For the dressing:

4 tbsp light soy sauce

2 tbsp honey

1 green chilli, chopped

Juice of 1 lime

Putting it all together:

Combine the veggies in a bowl.

Combine the dressing in a bowl.

Combine the veggies, noodles or quinoa, and dressing.

Top with peanuts and toasted sesame seeds.

Adjust to taste.
