No-Bake Salted Chocolate Tart


This is an easy no-bake recipe that you can serve either warm or cold. There are three parts to this dessert - the biscuit base, salted chocolate filling and a delicious cherry cinnamon sauce.

Mix and match each element and you have yourself a completely new dessert! Use the base to make a chocolate cheesecake or a chocolate crumble topping for an ice cream sundae. The cherry sauce can be served with ice cream, panna cotta or a chocolate mousse! If you don't have a tart mould, set the dessert in shot glasses to make bite-sized portions.

What you need:

Biscuit base

125 gms digestive biscuits

125 gms oreo biscuits

100 gms butter, melted

Chocolate ganache filling

400 gms semi-sweet baking chocolate, chopped

400 gms fresh cream

1 1/2 tsp salt

2 tbsp butter

Cherry cinnamon sauce

2 cups cherries

1-2 tbsp sugar, adjust to taste

½ cup water or white wine

1 cinnamon stick

Putting it all together:

1. To make the base, crush the biscuits in a blender or use a rolling pin. Combine with melted butter. Tip the mixture into a tart mould and press it firmly into the base and up the sides. Freeze at least one hour or until set.

2. To make the chocolate filling, start by pouring water into a saucepan halfway and bring to a simmer. Place a steel or glass bowl over the simmering water and stir the chocolate, salt and cream till the mixture is smooth and combined. Take off the heat and stir in the butter (this gives it a glossy finish). Pour the filling over the set biscuit base and even out the top as neatly as you can. Chill in the fridge until set.

3. In a saucepan, add the cherries, sugar, cinnamon and water/wine and cook till the cherries are soft and all ingredients combined. Add a couple of tablespoons of water if required. Discard the cinnamon. Pour spoonfuls of the sauce over the tart or serve it on the side.
