Pomegranate Guacamole


We all love a good guac. Yes it's a challenge picking out the right avocado and having it just right when you need to consume it. I have a little trick to ripen an avocado quickly- put it into a paper bag with a banana overnight. You should have a ripe fruit the next morning.

I was bored of the conventional guacamole so decided to add some pomegranate arils for a burst of fruity freshness. Wow, does it go well! You could also add some ripe mango cubes. Mangoes and avocadoes pair really well.

Serve this with my Chia and Sesame Chips which make a healthier substitute to Nachos.

Try these Mexican dishes:


What you need:

1 ripe avocado

½ clove crushed garlic

Juice of 1 lime

Salt

Cracked black pepper

Chilly flakes to taste (optional)

1 tsbp chopped coriander

½ onion, finely chopped

½ cup pomegranate seeds

Putting it all together:

1. Mash avocado in a bowl with the back of a fork. Leave it a bit chunky

2. Add all remaining ingredients and adjust to taste.
